Industrial attachment with a French resort hotel

Hayley Yeung, who studies for a Higher Diploma in Hotel and Catering Management, undertook industrial attachment at Hotel Mercure Majestic in La Baule, France, and benefitted much from the experience. “French cuisine is renowned for its exquisite presentation. Apart from being delicious, each dish also looks aesthetic. I tried emulating my colleagues in the way they did garnishing and food presentation. But on closer scrutiny, I discovered that for the same dish, there are numerous ways to present it, with so much to learn in this aspect! As for restaurant work, three to four of us were responsible for serving more than 90 customers. This made us develop ways to improve our service efficiency. Our most competent colleague could hold nine dishes simultaneously. After repeated practice, I could only handle four. This learning trip is very substantial.”
