- Table setting and service procedures
- Beverage and bartending service
- Basic operation of dining room
- Personal hygiene and safety
- Usage of utensils and equipment
- Methods of polishing and cleaning silverware, glassware and chinaware
- Common food and beverage terminologies and vocational English
