29 入學要求 : 完成中三或同等學歷。 Entry requirement: Completion of Secondary 3 or equivalent. 開辦分校 Of fer ing Campus: 酒店營運證書 (QF 級別2) Certificate in Hotel Operations (QF Level 2) 課程概要: ¡ 課程旨在為學員提供酒店營運的基本知識和 技巧,讓學員掌握酒店客務、房務和餐飲服 務的相關技能,認清自己的興趣和專長 ¡ 課程分為客務、房務及餐飲三大必修單元 ¡ 另可選取其中一項行業單元︰ Å 基礎西式前菜、主菜及糕點製作 Å 粵菜烹調理論與技巧 Å 酒店水療禮賓及銷售 Å 旅行團及旅行社服務 Å 餐飲項目統籌及營運 ¡ 學員亦會了解與酒店營運有關的行業專業知 識和技巧,有助擴闊學員升學或事業發展的 機會 ¡ 課程著重實踐學習,學員會被安排於訓練酒 店及餐廳進行實務培訓及綜合學習體驗單 元,有助學員建立在酒店業工作應具備的態 度和專業 ¡ 學員成功修畢本課程及指定單元,可選擇銜 接酒店 / 餐飲 / 中華廚藝 / 國際廚藝相關的 文憑課程;或可投身酒店業的相關職位 Core Contents : ¡ Aims to provide students with essential knowledge and skills in hotel operations. It integrates a defined range of key technical and operational skills required by entry-level staff who provide food and beverage, front office and housekeeping services ¡ Offers three core modules of Front Office, Housekeeping and Food and Beverage ¡ Students are required to select one of the following elective modules: Å Fundamentals of Western appetiser, main dishes and pastry preparation Å Guangdong cuisine preparation Å Hotel spa concierge and sales Å Group tour and travel agency service Å Catering event coordination and operations ¡ Students are able to extend their knowledge and skills in other study areas relevant to hotel operations with a view to widening their exposure for articulation or employment opportunities ¡ Emphasises hands-on experience.
