28 謝偉秋 King TSE 歐浩然 Toni AU 學院課程讓我有機會接觸並學習中國地方菜式,從而掌 握有關知識及技巧,並發掘自己的目標 ─ 成為一位中 廚師。 學院的鼓勵和導師的支持,給予我很大動力。為了提升 廚藝技術和汲取更多學習經驗,我參加了不少廚藝比 賽。我更於 2018 年由香港青年協會主辦的「低碳廚房 創意食譜烹飪比賽」中奪得冠軍,為我增強信心,並立 志繼續向中廚行業邁進。 During the programme, I have learnt a wide range of regional Chinese cuisines and techniques which inspired me to become a Chinese chef. With encouragement and support from instructors and the Institute, I learnt with great motivation and have participated in numerous culinary competitions in order to enhance my culinary skills and learning experiences. I am delighted to have won the championship in the “2018 Low Carbon Kitchen Creative Recipe Culinary Competition” organised by The Hong Kong Federation of Youth Groups. The experience has strengthened my confidence and determination to move forward in the Chinese culinary industry. 中式烹飪證書 (QF級別2) 如心酒店集團旗下餐廳「一喜」中級廚師 Graduate of Certificate in Chinese Cuisine (QF level 2) Demi Chef, LottaJoy, Nina Hospitality 完成中三後,我報讀了HTI 的酒店營運證書 (QF級別2) 課程,並於自選單元選修西式廚務,這是我第一次接受 正式的西廚培訓。之後我繼續進修,報讀歐陸廚藝文憑 (QF級別3) 課程,增進自己的廚藝知識及強化基本烹調 技巧。 我很開心及榮幸於2017年獲世界名廚羅加三兄弟選中, 能夠到他們位於西班牙的米芝蓮三星餐廳 El Celler de Can Roca 實習四個月。於實習期間,我汲取了寶貴的學 習經驗,學到頂尖餐廳所需的廚藝技巧及擴闊視野,對 於我現時在本港的米芝蓮餐廳的工作有很大幫助。 Upon completion of Secondary 3, I received my first formal training in Western cuisine by enrolling in HTI’s Certificate in Hotel Operations (QF Level 2) programme with Western Cuisine as elective. I pursued further training in fundamental culinary knowledge and skills through articulation to the Diploma in European Cuisine (QF Level 3) programme. In 2017, I was honored to be selected by the worldrenowned Roca Brothers for a 4-month internship at their Michelin 3-starred restaurant, El Celler de Can Roca in Spain.
