Facilities (page one)

 

All the facilities in the Chinese Cuisine Training Institute have been specifically designed to provide the best environment for learning and developing the art of Chinese Cuisine. Located on the 7th and 8th floors of the Pokfulam Training Centre Complex of the Vocational Training Council, the Institute has a Demonstration Kitchen, Training Kitchens for the regional cuisines of China, a Training Restaurant and Lounge, Food Science Laboratory and Computer Training Room.

The Demonstration Kitchen is a multi-purpose kitchen with a master chef wok station as its centerpiece. A maximum of 12 trainees can simultaneously practice at their own individual height-adjustable wok stations that are ergonomically designed to provide a comfortable and safe learning environment. Apart from the cooking demonstrations, the Kitchen may also be used for trade testing, Interest Courses, culinary competitions and food tasting. The seating arrangement in the Demonstration Kitchen can accommodate a maximum of 100 spectators.

The Training Kitchens cater for the diverse culinary skills needed in the preparation of the vast variety of Chinese specialties. Training Kitchens are divided into "Northern Cuisine", "Southern Cuisine", "Western Cuisine" and "Cold Food Preparation", giving trainees the opportunity to learn the full range of Chinese Cuisines.
