CC-812	Advanced Certificate in Chinese Cuisine
Duration:	6-month part-time course
Course Hours:	2-year part time course
Qualification:	In-service personnel in the catering industry, with a minimum of 2 years' related work experience after passing the intermediate trade test and subject to an enrolment interview. Candidates with a minimum of 9 years' related work experience may attain equivalent qualification through trade testing.
Course Content:	Culinary Theoretical Knowledge Characteristic, Usage and Storage of high-value ingredients Food and Beverage Management Techniques of Chinese Menu Preparation and Writing Cutting Skills for Chinese Cold Cuts Preparation Kitchen Design and Kitchen Organization Staff Training Skills
Fee:	HK$8,700 per annum
Remark:	- Medium of instruction will be in Chinese supplemented with English terminology
