Intermediate Certificate in Chinese Cuisine

 

 

Duration:

One year part time course

 

 

Course Hours:

Every Tuesday 8:30am - 4:45pm

 

 

Qualification:

In-service personnel in the catering industry, with a minimum of one year related work experience after passing the elementary trade test and subject to an enrolment interview. Candidates with a minimum of 6 years related work experience may attain equivalent qualification through trade testing.

  • Cooking Methods and Procedures
  • Usage of Chinese Herbs in Dishes
  • Food Science and Food Hygiene
  • Purchase and Check of Dried Seafood and Preparation
  • Techniques of Chinese Menu Preparation and Writing
  • Food and Beverage Service Knowledge
  • Environmental Knowledge

 

 

Fee:

HK$6,520 per annum

 

 

Remark:
