Certificate in Chinese Restaurant Operations for Hotels

 

 

Duration:

Four-month full time course

 

 

Course Hours:

Every Monday - Friday, 8:30am - 4:45pm

 

 

Qualification:

Candidates who are at least 17.5 years of age, with a minimum of form 3 qualification are eligible to apply. Candidates must also pass the enrolment interview and a physical examination(including chest x-ray and stool test will be accepted).

  • General knowledge in food & beverage industry and the organization of a hotel
  • Customer service
  • Personal hygiene and professional grooming
  • Food & beverage sanitation and safety rules
  • Cleansing procedures of chinaware, glassware and silverware
  • Knowledge of using dining utensils and equipment
  • Job-related English and Putonghua
  • Table setting and service procedures
  • Food & beverage terminology and knowledge
  • Concept of food & beverage and cocktail mixing
  • Banquet decoration and standard service procedures
  • Basic knowledge and standard service procedures for Guangdong Cuisine
  • Standard service procedures for room service
  • Promotion and sales skills
  • Guests psychology and relations, complaint handling and case study
  • Handling and operation of electronic payment system

Remarks:

- Trainees are required to take a trade test before graduation; the relevant fee shall be paid by the trainees.

 

- Medium of instruction will be in Chinese supplemented with English terminology
