Hotel Operations
Upon completion of the course, students should be able to:
- describe basic elements in the hospitality and tourism industry and apply basic customer service skills
- demonstrate basic knowledge in the operations of front office, housekeeping and food and beverage services
- perform basic practical skills in front office operations
- performa basic skills in housekeeping operations
- perform basic operations in food and beverage services
- understand and comminicate in English and Putonghua in the context of front office, housekeeping and food and beverage service operations
Course Content
- Introduction to the Hospitality Industry
- Introduction to Front Office Operations
- Functions and roles of the front office department and the duties and responsibilities of front office service personnel
- Practical skills in front office operations and the operational equipment
- Selling techniques
- Safety, security and emergency procedures
- Introduction to Housekeeping Operations
- Organization of the housekeeping department and the duties and responsibilities of its personnel
- Housekeeping procedures and application of different chemicals and operation of machines
- Computer software commonly used in housekeeping
- Introduction to Food and Beverage Service Operations
- Organization of a food and beverage service department and the duties and responsibilities of its personnel
- Basic menu and beverage knowledge, food service procedures and skills
- Food service utensils and equipment
- Basic food service hygiene and safety
- Job-related English and Putonghua
- Job-related English and Putonghua for front office, housekeeping operations and food and beverage services
