| Course Description | This course aims to familiarise students with knowledge pertaining to the overall Chinese kitchen knowledge and food & beverage knowledge. The course covers: Kitchen and Food & Beverage Organisation Chart;Kitchen Safety and Hygiene Knowledge;Knowledge of Kitchen Equipment and Use of Kitchen Knowledge of Ingredients and their usage;Knife Usage Techniques;Marinating Techniques;Dish Garnishing;Usage of Seasoning and Sauces;Cooking Methods;Basic Food Science;Basic Nutrition;Purchasing and Storage Knowledge;Basic Food Cost Control;Trade English and Terminology;Basic Putonghua Conversation;Basic Computer Usage;Service Culture Training. |
