Applicants should be in-service practitioners of the catering industry and should have passed the interview.
This course aims to familiarise students with knowledge pertaining to the overall Chinese kitchen knowledge and food & beverage knowledge.
The course covers: Kitchen and Food & Beverage Organisation Chart；Kitchen Safety and Hygiene Knowledge；Knowledge of Kitchen Equipment and Use of Kitchen Knowledge of Ingredients and their usage；Knife Usage Techniques；Marinating Techniques；Dish Garnishing；Usage of Seasoning and Sauces；Cooking Methods；Basic Food Science；Basic Nutrition；Purchasing and Storage Knowledge；Basic Food Cost Control；Trade English and Terminology；Basic Putonghua Conversation；Basic Computer Usage；Service Culture Training.
